What is a paring knife?

A paring knife is a small, versatile kitchen knife known for its short, manoeuvrable blade, usually between 8 and 10 cm.
It is designed for precise, delicate cutting tasks where larger chef’s knives can feel cumbersome.

Compact and lightweight, it offers excellent control and safety: its reduced size improves handling, helping to prevent slipping.
It is an essential tool that supports every stage of food preparation from peeling fruit and vegetables to finely slicing herbs.

Because of its versatility, the paring knife is considered a must-have in any kitchen, appreciated by both home cooks and professionals.
It combines speed, precision and reliability, making it an indispensable companion alongside chef’s knives and other cutting tools.

How to sharpen and care for your kitchen knife ?

An artisanal kitchen knife requires proper care to maintain its performance and durability over time.
Here are a few simple and effective tips.

Washing

Clean by hand with a soft sponge and dry immediately after use. Avoid dishwasher cleaning, which damages both the steel and the wooden handle.

Sharpening

Maintain the blade regularly with a whetstone or suitable honing steel, keeping to the recommended angle.

Storage

Use a knife block, magnetic rack or protective sheath to preserve the cutting edge.

How do I choose a paring knife?

Choose a knife that is light, manoeuvrable and well-balanced, ideal for fine cutting tasks. A quality blade and comfortable ergonomics ensure easy, safe use.

Is the paring knife dishwasher-safe?

No. Hand washing is recommended to preserve the blade and avoid damaging the wooden handle.

What is the ideal blade size for a paring knife?

Between 8 and 10 cm is a highly versatile length for short, precise gestures.

Does the wooden handle require special care?

Yes. Occasional light oiling nourishes the wood and maintains its natural sheen.

What tools should I use to sharpen a paring knife?

A whetstone or ceramic honing rod works well for regular maintenance. For full sharpening, our workshop uses a tailored abrasive belt.
